Cooling Table
The mass taken from the cooking kettle is discharged onto a water-jacketed stainless table and cooled under control. The aim is not to harden it, but to bring it to a formable consistency.
Colour and flavour are added at this stage; because the surface temperature is evenly distributed, the edges of the batch do not set early.
