Pulling / Aerating Machine
The cooled mass is aerated by being folded continuously between pulling arms. Trapped micro air bubbles scatter light, turning the transparent mass opaque and pale.
Pulling is not only cosmetic: an aerated mass gains a crisper texture and forms more easily during rope sizing.
