Cone (Cornet) Machine
Metered batter is pressed and baked between heated mould pairs; when the mould opens while still hot, the wafer is rolled into a cone on the forming mandrel. Rolling must happen hot — a cooled wafer cracks.
Mould temperature is set zone by zone: edges drying before the centre is the main reason cones split during rolling.
